Salt Fat Acid Heat makes making mayonnaise seem fun and easy... sadly, it doesn't warn about the serious arm muscles and/or pain tolerance you need to hand whisk egg yolk until it is convinced to capture some fat. It also makes rescuing a seperated mayonnaise attempt look easy, but again, willpower and pain tolerance.
I got impatient when my hand started to hurt 2 mins in, and... eventually just made really fatty egg with mushrooms out of the sad product.

I REALLY wanted to experience the magic of emulsions, but.... I think I can simply appreciate the already existing ones, and the ephemeral ones that I pour over salad, rather than trying to play god.
